I like hearty, flavorful soups with a kick, this tomato and leek soup is certainly comfort food and good for the soul!! One of the primary reasons I make pureed soup is to mask vegetable texture from my children (especially my son Kaegan). For those of you who have busy schedules, a pureed soup can speed up preparation time (in my opinion) as you can rough chop most of the veg and then add to the pot and build amazing layers of flavor. In this recipe you will need to note that I cook freestyle, but as I made this particular batch I did note all the ingredients. It is a large batch of soup and would be great for a family gathering (yields 14-16 bowls of soup)
Please feel free to add extra ingredients and change it up, the end result should be a rich and comforting soup for all ages.
2 tbsp EVOO
2 medium onions (Chopped)
3 leeks (washed well and chopped)
2 medium carrots (diced)
1 green pepper (chopped)
1 ½ litres beef, chicken or veg stock (for my recipe I used beef)
227 grams of mushrooms
2- 796 ml tins diced tomatoes (reduced salt)
50 ml 18% cream (a splash)
1 tbsp dried garlic
1 tsp pepper
1 tbsp oregano
1 tsp creole seasoning salt ( I use Tony Chachere’s LOVE IT!!)
Sour cream and Sriracha for garnish
In a large pot with plenty of cooking surface area (I used a 10 qt) combine olive oil, onions, leeks, and carrots, cook over medium heat until onions become translucent. Add the seasonings, mushrooms and green pepper, stir and continue cooking, by this time the aroma in your kitchen should be amazing!!
Add beef stock and tin tomatoes, bring soup back to a soft boil, then reduce and let simmer for about a half hour or to preference.
Remove soup from heat and let cool a little, add cream, salt and pepper to taste (at this point you could always enhance the flavor with a table spoon of brown sugar and a splash of cider vinegar),blend with a emersion blender or place small batches in a regular blender, blend until smooth.
Serve, add sour cream and a drizzle of Sriraca (major heat) if you like to add some flavorful heat to this dish.
